RECIPE: Cheesy Broccoli Leak Soup


I'M ALL FOR EASY, DELICIOUS, AND QUICK MEALS FOR MY FAMILY IN MY BUSY DAY!
I want to share one of my favorite recipes...

CHEESY BROCCOLI LEAK SOUP


2 Heads Broccoli

1 Leak (Small diced onion may substitute)

2 Cans Campbell's Cheddar Cheese Soup

1 Can Campbell's Cream Of Chicken Soup

1 Pint Heavy Whipping Cream (milk box size)
1 tsp. Seasoned Salt
Pepper To Taste
1-2 Inches Water
1 Pat Butter


Instructions:

Use large heavy pot (Dutch oven type). Clean and slice leak in sliver type pieces. Use only 1-2 inches of the green leafy part. Clean and chop up broccoli heads into floret size pieces (smaller is fine if you like a finer soup). Use solid parts of broccoli heads in 1" chunks. Put about 2 inches of water in the bottom of pot with pat of butter. Bring to a boil. Add leak slices first, then chunks of broccoli. Sprinkle with seasoned salt and pepper to taste. Cover and steam for ten minutes. While doing that, empty the three cans of soup into a microwaveable bowl. Microwave and stir in 1-2 minute increments. Get REALLY warm, but not too hot to taste. Fold in pint of whipping cream. When mixed together well, add to water / broccoli mixture. Stir all together well, but softly as not to break up the broccoli too badly. Heat to the slightest bubbling and serve. Goes great with grilled cheese sandwiches, or served alone with bread on a cold day. A wonderful filler for the sourdough bread bowls. Serves 6 easily, and more if small bowls or cups are used. Keeps well and is great left over too.
